Changsha smelly toufu comes in a distinctive black colour compared to the standard one. Either way both are fermented in a brine which gives the tofu a strong, pungent smell that some foreigners find a bit off-putting. It's really an acquired taste but once you overcome the initial shock process, you will find they actually taste delicious and why they are so popular !
