Shinobu is a charcoal grilled meat restaurant located near Nagahoribashi subway station. The restaurant mainly uses Satsuma Kuroge Wagyu beef, and its most popular dish is the signature thick-cut beef tongue and scallion bun. This midnight snack was also for it. The first dish served was the tenderloin (short tongue), which was rich in fat and very fragrant when grilled. It almost melts in your mouth. At less than 1,300 yen per portion, it has a very high CP value. Next was the main character, the beef tongue bun. The thick-cut Wagyu tongue was stuffed with a lot of chopped green onions. After charcoal grilling, the aroma was prominent and the meat burst with juices when you put it in your mouth. Even if it was slightly overcooked, the meat still remained soft, worthy of being a signature dish. I also ordered a plate of beef tongue sashimi. The shredded beef tongue was soft yet slightly crispy, mixed with sesame seeds, chives, seaweed and egg yolk.
