We started with the spring lamb chops, which were beautifully seasoned and grilled over Japanese binchōtan charcoal. Juicy, tender, and slightly smoky—exactly what you’d hope for. Then we went for the Wakanui Selection Board, which came with bone-in ribeye, grass-fed fillet, and more lamb. The ribeye had this rich, sweet marbling, while the fillet was clean and lean.
