Fresh ingredients and a lot of natural spices are added. Moroccans like to use sweet and sour fruits instead of various delicate seasonings. Frying is not a common cooking method, most of them are steamed and roasted.


Lunch was served at the second-ranked restaurant in Fez. The entire courtyard was in traditional Moorish style, with colorful tiles on the walls, floors, and stairs. Sitting alone in the middle of the restaurant and looking at the entire courtyard while eating lunch, I felt like I had strayed into the royal family. There are many restaurants like this in Morocco, and this one is highly recommended. The food was delicious.

Entering from a humble alley in the Medina of Fez, you will find a gorgeous Riad, exquisitely decorated, cozy and comfortable. The service was excellent and everyone was very friendly. The owner spoke fluent English, which made everything much easier. The food was excellent. The price was not cheap (just in Morocco... still very cheap compared to Western countries), but it was worth it. It was a special experience to have dinner in such a wonderful place.
