This is a restaurant in the old town of Segovia that is not particularly eye-catching. The food is delicious and Spanish-style. Segovia is not big but it is definitely worth a visit. It takes more than 20 minutes by train from Madrid, which is also very convenient.

When the food is prepared by an expert and specialist, it shows; as it did here. When a host takes pains to treat his customers as his guests, it shows; as it did here. A quiet dinner where we were well fed and treated like family. We experienced a certain, small form of perfection.

Segovia is famous for its roast suckling pig. All restaurants in the town sell roast suckling pig. Jose is located at the alley next to Plaza Mayor. Because it is so famous, there are a lot of people. The sign and the decoration inside the store are relatively retro. There is also a performance of cutting the pig with a plate. The suckling pig smells good.

This is a famous local restaurant in Segovia that specializes in roast suckling pig. I think this should be the signature dish here. When we went there, the boss actually took action himself.
